Use: Raw in combination with structured dishes, legumes, vegetable soups, on red meat or paired with cheese.

Fruity : green of medium intensity, rich of vegetal hints with calls of tomato leaves and with a high content of chlorophyll and carotene.
Use: cooked or raw vegetable dishes, seafood tartare, meat tartare, sea carpaccio, ground carpaccio.

COLOR: Intense Yellow-Green.
TASTE: Ample, with bitter and spicy in elegant balance.
